Weekend brunch is calling. With this quick, easy AND healthy taco, you will start your weekend just as you deserve it. Turmeric scrambled tofu is a perfect egg substitute with a hint of chilli and creamy guacamole…what’s not to love?

Prep Time: 5 minutes Cook Time: 10 minutes Serves: 2


for tacos

· 6 tacos

· 396g tofu (I use Cauldron)

· ½ tsp smoked paprika

· 1 tsp turmeric

· 2 spring onions

· 1 red chilli (optional)

· avocado

· ½ tsp garlic powder

· ½ lime juice

· 100g cherry tomatoes

· 4 sprigs of coriander

other ingredients

· 2 tbsp olive oil

· salt

· black pepper


1. Drain your tofu and wrap in kitchen roll to drain any excess liquid

2. Place the tofu in a bowl and scramble by use a back of a fork

3. Heat a frying pan on a medium heat with 1 tbsp of olive oil. Add the tofu and stir occasionally

4. Whilst your tofu cooks, start to make your guacamole by de skinning and seeding your avocado into a bowl. Add the olive oil, lime juice, garlic powder and mash with a fork

5. Chop your cherry tomatoes and coriander and mix into the guacamole. Leave to one side

6. Add the paprika and turmeric to tofu and mix well. Push the tofu to one side of your pan and add the spring onions to the other. Cook for one minute

7. Start to build your tacos
