APPLE TART

For some reason in the colder months, my sweet tooth becomes very demanding and therefore desserts are made much more often in our household. Who doesn’t love a classic British apple tart? Well, I do and I hope you do too! Here’s some sweet delicious-ness with granny smith apples, warm cinnamon sugar and a sharp apricot jam.

Prep Time: 10 minutes Cook Time: 20 minutes Serves: 8

INGREDIENTS

for apple tart

· 375g ready rolled puff pastry

· 4 tbsp apricot jam

· 2 green apples

· 2 tbsp coconut milk (I use Koko)

· 2 tbsp coconut sugar

· 1 tsp cinnamon

for yoghurt dip

· 150g plant based Greek yoghurt (I use Alpro)

· 2 tbsp maple syrup

· 2 tsp chia seeds

METHOD

1. Pre-heat the oven to 200° fan

2. Mix all the yoghurt dip ingredients together in a bowl and leave in the fridge to chill

3. Lay out the pastry and cut into eight even squares before placing on a baking tray lined with baking paper

4. Spread half a table spoon of apricot jam onto each pastry square leaving 1cm margins all the way round. Slice the apples and place on top of the jam

5. With a pastry brush, brush the 1cm edges with coconut milk

6. Mix together the coconut sugar and cinnamon and dust over each tart

7. Place in the oven for 15-20 minutes, until the pastry is crispy and golden

8. Serve with a dollop of yoghurt dip
