A Vietnamese classic. Banh mi, meaning bread, basically a delicious sandwich with the Asian flavours.

Prep Time: 15 minutes Cook Time: 10 minutes Serves: 2


for banh mi

· ½ French baguette

· 1 carrot

· ¼ red cabbage

· 3 tbsp of hummus (you can either shop buy or make your own)

· 1 tbsp sriracha

· 200g tofu

· 2 tbsp soy sauce

· 10g peanuts

· 2 sprigs of coriander

other ingredients

· olive oil

· black pepper


1. Pre heat oven to 200˚ fan

2. Grate your carrot into a bowl. Finely cut the cabbage and add to the bowl with the carrot. Add a table spoon of the hummus and mixed thoroughly

3. Cut the tofu into 8 slices, place onto an oven tray and drizzle olive oil, soy sauce and black pepper. Cook for 10 minutes

4. Meanwhile, cut the coriander and peanuts into small pieces

5. Cut your baguette into half, add another table spoon of hummus into each and sriracha sauce

6. Add the mixed carrot and cabbage and tofu to the baguette. Top with coriander and peanuts
