Winter is approaching so not only is it important to keep your vitamins up, which this dish is certainly full of vitamin C with carrot, sweet potato and kale but also nice to have a warm lunch. It’s super comforting, wholesome and delicious.

Prep Time: 20 minutes Cook Time: 10 minutes Serves: 2


for fritters

· 300g sweet potato

· 2 carrots

· ½ red chilli

· 1 tbsp ground flax seeds

· 3 tsp water

· 1 tbsp plain flour

· 1 tsp paprika

for garnish

· 200g kale

· 1 avocado

· ½ juice of lemon

other ingredients

· 1-2 tbsp olive oil

· salt

· black pepper


1. Add the ground flaxseeds and water into a small bowl and mix well. Leave to one side

2. Grate the carrot and sweet potato into a clean tea towel and drain any access liquid. Place into a bowl

3. Add the flour, paprika, ½ chopped chilli and flax seeds with a pinch of salt and black pepper to the carrot and sweet potato and mix well with a spoon

4. Form fritters in your hands with approximately 2 tbsp of the mixture. Leave to one side once there is no mixture left and all your fritters are formed

5. Heat 1 tbsp of olive oil in a medium size pan and cook your fritters for 5 minutes before turning onto the other side, until golden brown. Repeat and add more oil to the pan if needed

6. Meanwhile, place your kale in a bowl and top with boiling water to cook. Try not to overcook, so the kale still has a slight crunch

7. Serve the fritters on top of the kale with a pinch of salt and pepper and dress with chopped avocado and lemon juice
