RASPBERRY, CHIA SEED & MINT JAM

If you knew how easy it was to make homemade jam, you will never buy it from the shop again…I promise! Pretty much great on anything breakfast related; toast, porridge, crumpets. Maybe even a scone?


Prep Time: 5 minutes Cook Time: 10 minutes Serves: 2-3

INGREDIENTS

for jam

· 150g frozen raspberries

· 2 tbsp maple syrup

· 1 tbsp chia seeds (I use Naturya)

· 2 sprigs of mint

METHOD

1. Heat the raspberries on a low-medium heat in a saucepan. Add the maple syrup

2. Finely chop the mint. Keep stirring the raspberries regularly to help break them up

3. Once the raspberries are soft, remove from the heat and add the chia seeds and mint

4. Stir well and allow to cool before moving into a covered container to keep in the jam in the fridge
