RADISH SLAW

So chuffed last week discovering our first homegrown, I was desperate to create something in the kitchen and share it with you all. Super quick slaw...it really is better when you grow your own.


Prep Time: 10 minutes Cook Time: 0 minutes Serves: 2

INGREDIENTS

for slaw

· 1 large carrot

· 6 radish

· 1 tsp wholegrain mustard

· 1 tbsp vegan mayonnaise

other ingredients

· 2 sprigs coriander

· 1 lemon

· salt

· black pepper

METHOD

1. Grate carrot onto an old tea towel. Bind the top of the tea towel together and squeeze out any excess liquid. Finely chop radish

2. Add the grated carrot and radish to a bowl and mix well with salt, black pepper and lemon juice

3. Mix again with wholegrain mustard and mayo

4. Serve with chopped coriander
