Let’s be honest, we are all hoping we can be together again in time for summer BBQ’s and who doesn’t have potato salad with a BBQ? Here’s a super easy and tasty side dish.

Prep Time: 10 minutes Cook Time: 10 minutes Serves: 3-4


for potato salad

· 350g new potatoes

· 2 tsp capers

· 1 lemon juice & ½ lemon zest

· 1 tbsp plant based mayonnaise

· 2 tbsp plant based yoghurt

· 2 spring onion

· 3 sprigs of chives

other ingredients

· black pepper

· salt


1. Cut the potatoes into bite size pieces, keeping the skin on. Add to boiling water with a pinch of salt and boil for 10 minutes or until potatoes are soft

2. Once the potatoes are cooked, drain the water and allow to cool

3. Meanwhile finely chop the spring onion and chives and add into a bowl with the yoghurt, mayo, lemon juice and capers. Mix well

4. Add the potatoes and mix again making sure all potatoes are dressed

5. Add half a lemon zest and black pepper before serving
