Harissa is a Tunisian red pepper base paste full with herbs and a hint of spice and in our house hold we like it spicy so I had to create this recipe to share. It’s super easy to make and full of flavour. It will definitely get your taste buds partying in your mouth.

Prep Time: 5 minutes Cook Time: 30 minutes Serves: 2

for cauliflower

· ½ - 1 cauliflower (depending on the size of the cauliflower)

· 2 tbsp harissa paste (I use Belazu)

· 100g spinach

· 1 garlic clove

· 10 plum tomatoes

· 1 tsp chilli flakes (depending how spicy you like it)

· ½ lemon

· 1 onion

other ingredients

· 150g brown rice

· salt

· black pepper

· 2 tbsp olive oil

1. Pre-heat oven to 180˚ fan. Cut cauliflower into four 2cm thickness steaks. Place on a baking tray and drizzle 1 tbsp olive oil, salt, black pepper and chilli flakes. Place in the oven for 30 – 35 minutes

2. Add the rice to a saucepan of boiling water and a pinch of salt, cook according to packet instructions

3. Meanwhile, cut the onion, garlic and half the plum tomatoes. Heat a medium size pan, with the other remaining olive oil on a low-medium heat. Add the onion, garlic, tomatoes and a pinch of salt and black pepper

4. Once cooked, add the spinach until wilted with the harissa paste and the juice of the lemon

5. Drain the rice and serve with cauliflower steaks and harissa mix. Add a wedge of lemon on the side if you wish

Enjoy, xx
