Perfect to batch cook for healthy breakfast in the week, get prepping over weekend with this delicious granola. Something that feels naughty but full of nutrition and natural ingredients. I cannot get enough so I hope you love it too!

Prep Time: 10 minutes Cook Time: 40 minutes Serves: 8


for granola

· 170g oats (I use Flanagan’s)

· 60g brazil nuts

· 60g almond

· 60g walnuts

· 60g desiccated coconut

· 100ml coconut oil

· 25ml maple syrup

· 1 tsp vanilla extract

· 25g raisins

· 50g dark chocolate

· pinch of salt


1. Pre-heat oven to 140° fan

2. Put the brazil nuts, walnuts and almonds into a clean tea towel. Wrap them up and break them up using a rolling pin

3. Mix oats, nuts, pinch of salt and desiccated coconut in a large bowl

3. Heat a small saucepan on low-medium heat and add the coconut oil, maple syrup and vanilla extract until liquefied

4. Combine to the bowl of oats and nuts and mix well. Evenly spread the mix onto a baking tray

5. Place into oven for 40 minutes, mix halfway through

6. Once the oats are cooked, break the dark chocolate into small size and sprinkle over the oats with the raisins and allow to cool before transferring into dry food storage to keep
