CHOCOLATE CHIA PUDDING - APRICOT PURÉE

Healthy chia seed pudding, perfect for a dessert or breakfast. I tend to make mine the night before to allow more setting time but it can be eaten on the same day if preferred. The chocolate flavour makes this a real treat along with the smooth apricot purée for a sweeter finish.


Prep Time: 35 minutes Cook Time: 0 minutes Serves: 1

INGREDIENTS

for pudding

· 4 tbsp chia seeds

· 2 tbsp soya yoghurt

· 250ml coconut milk (I use Koko)

· 1 tbsp cacao powder (I use Seven Hills)

for apricot purée

· 150g apricots

· 1 tsp maple syrup

METHOD

1. Add all the pudding ingredients into a bowl or glass and mix well with a spoon or whisk

2. Leave to set in the fridge for at least 30 mins

3. Meanwhile at the apricot purée ingredients to a blender and blitz until smooth

4. Once the chia pudding is set, top with the apricot
