Yes, so my pancake obsession is a little extreme but I just love the variety of how to make them and the amount of toppings! Here’s another version of a more fluffy favourite.

Prep Time: 10 minutes Cook Time: 10 minutes Serves: 2


for pancakes

· 1 banana

· 90g buckwheat flour or other flour works (I use Doves Farm)

· 1 tsp baking powder

· 240 ml plant based milk

for toppings

· 1 banana

· 30g pecan nuts

· 10g cacao nibs

· 2 tbsp maple syrup

other ingredients

· coconut oil


1. Add 1 banana, flour, baking powder and milk into a food processor and blend

2. Heat a little coconut oil into a medium size pan and pour 3 tablespoons of the mixture. Cook for approximately 2 minutes before flipping onto the other side until golden brown

3. Continue step 2 until the batter has finished. You should end up with approximately 3 pancakes per person

4. Finely slice 1 banana and chopped the pecans into smaller pieces

5. Top the pancakes with banana, pecans, cacao nibs and maple syrup
